What's the difference between 32 bit and 64 bit? My mid 2009 15" MBP is currently booting in 64 bit by default (as I set it to). I know that 64 bit is faster, but are there any other benefits? Any statistics about how much faster?

Full on 64-bit mode is when you run the 64-bit kernel. The major benefit to this is taking advantage of software specifically coded for 64-bit environments. In most cases, you’re not going to see a difference. The cases where it will make a difference is when you’re running high end software like Matlab and other scientific stuff. 

64-bit mode will not make iTunes run any faster. I promise.
